Catering at our retreat centre
No retreat is complete unless you can provide mouth-watering and healthy meals for your students. At the Mimosa Retreat centre we offer you the freedom of choosing your own catering options. You can either hire or bring along your own chef who can be accommodated comfortably in the staff room or you can choose one of our two in-house chefs who we can highly recommend. There is a fully equipped and fitted kitchen where all meals can be prepared.
If you choose one of our chefs we will let you know if they have availability on enquiry. You will also have the opportunity of using our in-house cleaning staff member, Arnel, who will assist in setting tables and laying out food for service. This service will also include after meal clean-up. This will free you up to spend time with your students and focus on your classes.
There are many variables to consider when choosing your catering option for your students. For example: Do you require a fully vegetarian menu or not? How many meals a day would you want to offer your students? Would you want to eat outside of the property on any given day? What is your budget? We endeavour to offer you as much choice as possible! Please let us know your requirements and we will provide a sample menu and costing thereof. We cost our catering per head / per day, minimum of 10.
Our two in-house chefs are:
Kosta is Greek by origin and is capable of cooking for large groups of 10 or more.
He has natural flair with all the traditional Greek fare using in-season local produce from the island and its surrounds. He caters well for buffet style eating where students can help themselves. He can adapt to a vegetarian or vegan menu well which will ensure both delicious and wholesome choices. His vegan and vegetarian specialties include a sublime vegetarian moussaka with a light soya cream, spanakopita, colourful Greek salads, Santorini’s fava with spring onion and grape sauce and the best baklava on the island! He would be happy to discuss a meal plan with you prior to your event.

Adam is British and lives on Paxos, Greece. He too is proficient in cooking for large groups. He is a self-trained chef who supplemented his knowledge at the Cordon Blue and in commercial kitchens in Milan and Toronto.
Adam has an incredible talent for creating dishes which look vibrant and colourful. He has an interest in superfoods and unusual ingredients using them alongside Mediterranean ingredients. His specialties include harissa prawns with mango salad, local tomato and herb salad with aged feta and a Greek inspired quinoa and lentil salad. If you have meat-eaters amongst your students, you are in good hands. Adam’s stuffed pork tenderloin with beetroot puree is excellent.
He is happy to provide a menu sample pre-arrival and discuss various options according to your requirements. He can adapt well to both vegetarian and vegan meals choices and will focus on health and wellbeing through his food choices.
